Here is a fun and easy recipe that works great for a crowd of all ages. The better the quality of the ingredients you use, the better the finished product will be, but even if you use Lipton and the ancient spices that have been living in your pantry for years, it will still taste pretty amazing. To make a decaf version you can either use decaf black tea or rooibos, which is naturally decaffeinated. This is a pretty flexible recipe so feel free to play with the ingredients a bit. You can try adding a bit of vanilla, cardamom, star anise, peppercorn, allspice and/or nutmeg. Honey also makes a great substitute for the suger.
Tara’s Crock O’ Chai
- 8 cups water
- 3/4 cup sugar
- 1 1/2 tsp ground cloves or about 8 whole
- 2-3 cinnamon sticks (you can use 2 tsp powder if you don’t have sticks)
- 4 slices of ginger
- 6 black tea bags or equivalent in loose leaf
- 2 cups milk
- Stir together the water, sugar, cloves, cinnamon and ginger in the crock pot. Add the tea.
- Cover and cook on high 2 hours. You can give or take a half hour depending on how black you want the finished chai to be.
- Strain mixture, discarding any solids. Stir in milk.
Makes about 8 servings. You can serve this hot or cold or even blended with ice.
