Cold fresh water of the highest quality is the best type for making tea. Because it has more oxygen than lukewarm or hot water, putting the kettle on with cold water and heating it to the right temperature brings out the tea’s flavor.
Tap water is okay if filtered; but the chemicals in ordinary tap water can inhibit the flavor of gourmet tea. Bottled drinking water is not great for making tea because it comes from the same source as tap water. Distilled water is unpalatable and lacks flavor-boosting oxygen. It will make the tea taste flat.
The very best water to use for making tea is high quality natural spring water, which you can purchase at local supermarkets or whole foods stores throughout Atlanta.
