There are two easy ways to make scones—pouring a batter mixture directly into a prepared scone pan, or forming and rolling dough into various shapes and baking on a cookie sheet. You don’t need to be a gourmet cook to make scones; many recipes are quick and easy and can be adapted to most dietary requirements.
The Dough Method
Start with a basic baking powder biscuit recipe. Although prior to the mid-1800s scones were made with yeast, baking powder takes less time and produces better results. Sift all dry ingredients into a mixing bowl; cut in shortening and add nuts, fruit and vegetables or the like. Pour in milk or other liquid and gently knead the dough. Roll onto a floured surface and use a biscuit cutter to make into round scones. Bake in an oven at 400 to 450 degrees F.
The Batter Method
Use a pre-packaged scone or baking mix and follow directions on the package. Add appropriate amounts of cooking oil, eggs, flavoring, chopped savories or sweet ingredients and milk. Mix into a thick batter and pour into a scone pan. Bake at the same oven temperature as the dough method.
