Raincoast Crisps with Camembert & Cranberry Salsa
(Serve as appetizers for 6-8 guests)
Salsa Ingredients
- 2 cups fresh or frozen cranberries
- 1 apple finely chopped
- 1 big bunch chopped cilantro (1/2 to 1 cup)
- 6 tablespoons or more sugar (brown or white)
- chopped serrano or jalapeno (1 chile chopped or more depending on heat preference)
- zest from 2 oranges and 2 limes
- dash of salt
Method
Mix all ingredients together and pulse until coarsely chopped in a food processor (or a hand held electric grinder). Let sit several hours or overnight so flavours mix well. Adjust sugar and chile for sweetness and heat. Serve in a bowl alongside a wheel of Camembert at room temperature and Raincoast Crisps. Enjoy!
