Step One: Roll the dough to rectangle about an 1/2 inch thick
- Step One: Roll the dough to rectangle about an 1/2 inch thick
- Step Two: Spot the butter on 1/3 of the dough
- Step Three: Fold 1/3 of dough over the center half of the butter part.
- Step Four: Complete the 3-fold by folding over the remaining 1/3 of dough
- Step Five: Turn the dough 90º
- Step Six: Roll dough to a rectangle being careful not to press too hard on the dough
- Step Seven: Book Fold -- bring in each side to the center
- Step Eight: Complete the book fold by closing the book, i.e, folding the dough together. Refrigerate for 20 minutes. Repeat steps 6-8 three more times, refrigerating for 20 minutes between each time.
