2 ½ cups of all-purpose flour
1 cup oatmeal
½ tsp. Baking soda
2 tsp. pumpkin pie spice
1 cup dark brown sugar, packed
½ cup white sugar
¾ cup butter, softened
1 large egg
1 15 oz can pumpkin
1 tsp pure vanilla
1 cup of dried cranberries
½ cup walnuts- chopped
½ cup almonds-chopped

- Preheat oven to 350
- Spray a 9X13 pan with Pam.
- In a medium bowl combine flour, oatmeal, soda and pumpkin pie spice.
- Mix well with a wire whisk and set aside.
- In a large bowl blend sugars with an electric mixer set at medium speed.
- Add butter and beat.
- Blend in egg,
- can of pumpkin,
- vanillaBeat at medium speed until light and fluffy.Add flour mixture,
- cranberries
- walnuts
- almonds
- Blend at low speed just until combined.
- Transfer batter into the prepared pan, and level with a rubber spatula. Or leave bumpy for more of a texture.
- Bake in the center of oven for 35-45 minutes or until a knife comes out clean.
- Cool on rack to room temperature.
- Cut with a sharp knife into 1-by-2 inch bars.
- This is a heavy batter so it could be dropped as cookies. Enjoy!
