- Cut red potatoes into 1/4-inch slices.
- Slice onions and red bell pepper, mince garlic.
- Fry potatoes in a tablespoon of olive oil; salt and pepper to taste
- Flip the potatoes when brown on one side, then add red pepper and onion.
- Cook until onions begin to caramelize
- Lower heat and add garlic.
- Stir and let garlic cook just slightly.
- Add a dollop of sour cream to a warm tortilla.
- Top with potato, red pepper, onion, and garlic mixture.
- Roll burrito-style and enjoy! Makes 4 wraps.
