- Peanut sauce 1/4 c. smooth peanut butter 1 tbl. rice vinegar 2 tsp. soy sauce 1 tbl. fresh lime juice 1 tbl. fresh lemon juice 1 tbl. fresh orange juice 1 tbl. sambal oelek water for thinning sauce if necessary Stir ingredients together until sauce is smooth and creamy. Add water, 1 tablespoon at a time, if a thinner sauce is desired.
- Peanut noodles 1 cup sliced red bell pepper 1 cup sliced orange bell pepper 1 cup sliced carrot 1/2 c. sliced green onion 2 tbl. Thai basil or regular basil, chopped 2 tbl. cilantro, chopped 1 tbl. chopped peanuts or 1 tbl. toasted black sesame seeds 1 tbl. sesame oil
- Toss cooked Shanghai style noodles with sauce. Toss with remaining ingredients. Garnish with peanuts or black sesame seeds and sesame oil.
