This was one of the best recipes I have ever used. My family flipped over MIss Kay's Swiss steak. It is served over rice.

She called for 8 cubed steaks. I bought mine in packs of two at Kroger for around $2.00.

The interesting part of this recipe is she chops the cubed steak before breading and frying. I found a steak knife worked best.

She said to brown them. They cook really fast, but you don't really want to cook them all the way through.

Set the breaded, fried meat aside. Miss Kay uses a cast iron skillet for the whole thing start to finish. I used an old roaster pan. At this point I placed the meat in the pan.

Some garlic and the three important vegetables that Louisiana cooks always use: onion, celery, and green pepper. I used two small onions, two sticks of celery, and 3 green peppers. Miss Kay called for 2 or more.

No fine chopping is necessary. I just chopped in moderate size pieces.

Fry the veggies in oil for a few minutes.

Add a big can of crushed tomatoes. I added about a third of another can because of my big pot.

Bake for around 2 hours at 325 degrees. I stirred two or three times during the cooking.

The tomato liquid will start to dry up.
