- To "rub in the butter", first you need to cut it into small pieces (about 1/2" square).
- Next, use your fingertips to blend it into the dry ingredients.
- It should look like coarse crumbs after the butter is mixed in.
- When all the ingredients have been added, mix it together into a stiff dough. Use your hands to make sure you get it all.
- Put the dough on a floured board or counter and roll it out until it's 1/8" thick. Add more flour if it sticks to the rolling pin or board.
- Cut out the shapes with your favorite cutter.
- Get as many as you can out of the dough and then collect the scraps, mix them together, and roll them out again.
- When you have the cookies on the sheet, use a fork to poke holes in them. This helps them cook evenly.
- Use your imagination and make interesting designs.
- Out of the oven and ready to eat!
