- Do you have a surplus of pumpkin in your pantry? If so, this recipe is for you.
- Simmer 1 can of pumpkin with chicken broth.
- Process 1 slice of bread into bread crumbs, and grate 2 cups of Gouda cheese.
- Sauté onion in butter, then add flour and milk to create a roux. Add 1/2 of the Gouda, Parmesan, nutmeg, and cayenne.
- Add pumpkin to complete the sauce.
- Pour sauce over cooked whole wheat pasta. Sprinkle bread crumbs and remaining cheese on top. Bake for 20 minutes.
- Serve with sautéed kale. Enjoy!
