- Step by step pictures to help you make your own delicious Fesenjoon at home!Step one: rally the troops: all ingredients pictured except walnuts, chicken, sugar and pepper mill
- Step 2: toast 2 cups of walnut halves in oven at 350º for 8-10 min. I left them in for 10'.
- Step 3: remove skin and bones from chicken thigh meat, and chop into bite-sized cubes. Throw everyone into a pot with butter and olive oil mixture and brown. You can do this step in batches. Make sure to salt your chicken at this stage
- Step 4: while your chicken is browning, grind the walnuts. The recipe calls for fine grind; I kept mine at a coarse meal for some texture and to add a crunchy quality to the dish
- Step 4b: chopped walnuts. Max 5 pulses on the grind feature
- Step 5: take the chicken out of the pot with tongs or a slotted spoon. Add another tbsp of butter and olive oil. Let melt.
- Step 6: add chopped onions to pot. Sautée until translucent
- Step 7: add chicken to onions. cover with 2 cups of chicken broth (or in my case, one can of chicken broth topped off with some water). Bring to a boil, then reduce to simmer, cover and let it cook for 30 min.
- Step 8: the spice mixture. 2 tbsp + 2 tsp of sugar (though less might be better), 1/2 tsp of turmeric, 1/4 tsp cinnamon, 1/4 tsp fresh ground nutmeg, 1/4 tsp fresh cracked black pepper
- Step 9: add the spice blend plus ground walnuts and 5 tbsp of the pomegranate molasses. Stir well.
- Step 9b: cover and let cook at low heat (though I had mine at medium low) for an hour. Make sure to stir so that the walnuts don't stick to the bottom of the pot. Stir more frequently the finer the grind.
- Step 10: Jasmine Rice! I used about 1.5 cups. Make sure you rinse your rice before adding it to your pot. Follow the instructions on this link http://chinesefood.about.com/cs/cookingbasics/ht/steamrice.htm to make perfect rice.
- Step 10b: rice fluffed and ready to be packed for lunch
- Step 11: cooked fesenjoon transferred to pyrex tupper and sprinkled with pomegranate seeds for that extra crunch.
- Step 12: serve and consume.Enjoy!
