- Start with 4 ears of sweet white corn cut from the cob
- Mix in a pint of cherry or baby plum tomatoes, halved
- Gently add one diced ripe yet firm avocado
- Chop a handful of cilantro and mix into salad
- Add 1/4 red onion, minced
- Add the juice of one lime + 2.5 tablespoons olive oil + salt and pepper to taste OR add 3 tablespoons of Extravagonzo Red Chili infused Culinary Oil
- Mix ingredients gently but well
- Serve alone or as a companion dish. Enjoy!
