Combine arugula leaves, Parmesan cheese, garlic, cashews and garbanzo beans in bowl of food processor

- Pulse on and off a couple of times to blend
- Slowly stream in extra virgin olive oil
- Process until almost smooth
- Complete pesto has a pretty bright green color
- Store pesto in Ziploc bags in freezer, or covered in the refrigerator for one week
