Single mom families cooking: Great ways to eat chicken

Single mom families can spend quality time together preparing meals. At the very least, they can prepare the evening meal together. By doing this as a family, moms can teach their children about nutrition facts, and the families can grow closer. September is National Chicken Month. These tips will help you to create healthy meals as and for your family.

Chicken can be purchased at a number of locations in Bangor, including Hannaford and Sam's Club.

Single moms, gather your children around the table and enjoy an evening of preparing and eating dinner as a family.

  • Create a salad of fresh lettuce, spinach, cucumbers and tomatoes. Top with precooked chicken slices. Serve with milk, and whole wheat Italian bread with honey butter.
  • Older children can help mom chop vegetables for a stew: Potatoes, carrots, celery, sweet potato and chicken can be simmered on the stovetop with vegetable broth. Serve with milk and grilled cheese sandwiches on whole wheat bread.
  • Grill or broil chicken and serve over whole wheat pasta with cooked corn or peas and a sprinkling of cheese. Serve with milk and garlic bread.
