The Managing Director and staff of Las Ventanas greeted us at the entrance with a delicious, refreshing caballito (a Mexican shot glass) of a foamy, white-topped drink. One of the staff kept pouring it from a silver container that looked remarkably like a seltzer bottle. As we walked through the hotel, we repeatedly filled our small glasses and enjoyed the introduction to one of the most romantic hotels in Los Cabos, set against the coastline of the Sea of Cortez. This hotel is so romantic, it even has a Director of Romance. Walking through the property the romance coordinator, Lorena, regaled us with stories of many of the romantic events they have hosted as well as the unusual requests they have fulfilled.
Our twilight walk included a variety of venues from which one could choose the wedding or vow renewal setting. There is the Plaza, a terrace perched on the resort's highest point, featuring an expansive, inspiring panorama of sea and coastline, or the beachfront, where a ceremony held right on the sand is unspeakably romantic.

For other related activities, there is a private banquet room that opens to a beautiful inlaid-pebble terrace with majestic ocean views where guests may dine indoors or outdoors under the moonlit Baja sky, or both at the same time. Imagine a rehearsal dinner held in the intoxicating La Cava, the private wine room where you dine among thousands of bottles of the world's finest vintages. And for the more adventuresome of events, hold a traditional Mexican beach barbecue, with sizzling aromatic grilled foods and a roaring bonfire on the sand. For a romantic dining experience, luminarias along the beach guide you to your dinner for two set in a private beach cabana, complete with your personal server.
The beauty of the surroundings alone make this a perfect romantic setting for a destination wedding, honeymoon or vow renewal ceremony. Add the warmth and the overwhelming sense of hospitality exuded by the staff, and you have a recipe for romance.

And speaking of recipes, the delicious drink was a signature Las Ventanas Welcoming Margarita. The Managing Director had the staff bring another bottle after dinner that evening as well as the recipe.
For anyone who wants to emulate this refreshing summer cocktail, here is the recipe:
INGREDIENTS:
2 ounces tequila reposado
1 ½ ounces cointreau
¾ ounce Natural Syrup
1 ½ ounce Lime Juice
8 pcs Grenetine sheets
PROCEDURE:
Place the grenetine in cold water and hydrate it for about 5 minutes .
Place the other ingredients in the shaker and mix well. Take a part of this liquid and warm in the microwave for 30 seconds. Take the hydrated grenetine and mix with the warm liquid until the gelatin is dissolved. Place in a sifon no more than ¾ of the capacity and use 2 gas charges. Serve it!!!
