Southwestern Sliders

2 pounds premium ground beef (80% lean and 20% fat)
20 pepper jack cheese slices
20 soft dinner rolls, split and toasted
Salt and pepper to taste
3 plum tomatoes thinly sliced
Arugula (a few pieces for each slider)
Wholly Guacamole Spicy dip (as much as desired)
Serve with pickled jalapenos on the side for extra southwest kick!
Olive Oil

Place meat into a larger bowl and lightly mix with salt and pepper. Use a fork to avoid over mixing. Shape into 20 patties, about 2 tablespoons of meat per patty.

Brush each parry with olive oil to keep from sticking. Arrange patties on a large baking sheet and place in a hot oven preheated to broil. Broil for 4 to 5 minutes. As soon as the hot patties come out of the oven top with a slice of pepper jack cheese and let melt.

Lightly toast split dinner rolls in broiler. Don’t take your eyes off them as they will toast very quickly.

Assemble the sliders by placing a few pieces of arugula on the bottom of the slider bun. Top with cheese covered patty, a thin slice of tomato and guacamole. Serve with a few pickled jalapenos on the side for some extra heat.

Spicy Guac Mac N Cheese

2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
2 cups shredded pepper jack cheese
1 cup shredded cheddar cheese
8 ounce package elbow macaroni
1 (7 ounce) package of Wholly Guacamole® Classic dip
2 tablespoons chopped cilantro
2 jalapenos, seeded and diced

In a separate pot, bring water to a boil. Add macaroni noodles and cook for 8-10 minutes or until noodles are cooked. Carefully drain and set aside.

Melt butter in a saucepan over medium heat. Stir in flour and cook for 1 minute, stir constantly with a whisk. Be careful not to burn the flour mixture.

Stir in milk and continue stirring until mixture boils and becomes thick. Once mixture has thickened add shredded cheese; stir until cheese has melted. Sauce should be creamy and smooth.

In a large mixing bowl, combine Wholly Guacamole dip, cilantro and jalapenos. Add drained, cooked noodles and cheese sauce. Gently stir until all ingredients are well distributed. Garnish with cilantro.

You don't have to wait for game day to enjoy these recipes. Wholly Guacamole is the perfect addition to all of your parties or you can enjoy these products as tasty anytime snacks.
