Uncle Maddio's Pizza Joint, in the Northshore Town Center of West Knoxville, has been open since June, 2013. This pizza franchise is in the Publix shopping center along with Five Guys Burgers and Fries and Froyoz Frozen Yogurt. The franchise owner, Glen Lax, owns multiple franchises in a number of states. Each operation is run as a small business.
Uncle Maddio's was developed by Matt Andrew, a founder and former President of Moe's Southwest Grill, in a suburb of Atlanta, Georgia. The Uncle Maddio's concept is similar to that of Moe's in that the customer builds a pizza, salad or panini from available options. The Uncle Maddio's Pizza Joint company motto is "Real Pizza, Real Fresh, Real Fast".
All customers are greeted with "Ciao, Maddio" similar to the "Welcome to Moe's" greeting. Pizza's can be ordered pre-designed such as "The Big Max" which comes with Tomato-Basil sauce, Mozzarella cheese, pepperoni, Italian sausage, crumbled bacon and handmade meatballs. The pizzas can be designed ala carte.
There are three dough options: white, whole wheat or gluten-free. If gluten-free dough is ordered, a strict protocol is followed. The preparation area is wiped down and gloves are changed.
The Big Max pizza is delicious. The pizza is cooked on a conveyor belt oven and can be baked to order. The sausage is big and flavorful. The sauce is not sweet and the basil is subtle.
The Chicken Caesar salad is a surprising winner. The chicken tastes like it was pulled from a freshly cooked rotisserie chicken. The Romaine lettuce was fresh with no brown spots. The Caesar salad dressing was excellent. All of Uncle Maddio's salad dressings are in store made with Extra Virgin Olive Oil.
The cannoli dessert was hand-filled when ordered. The crust was crispy and the filling was very creamy and not too sweet.
For a franchise operation, Uncle Maddio's is a real find.
