With September in motion, it's time to say goodbye to lemonade, shorts, and summer and look forward to the cozy sweaters and pumpkin lattes of fall.
But why not give summer one last hurrah by incorporating some of those late summer vegetables into your meal?
This summer vegetable linguine with feta recipe from "The Comfort of Cooking" seems like a delicious way to send off summer with a combination of delicious veggies and fresh feta cheese. But does the recipe hold up to the mouth-watering promises of the photos?
According to this examiner, this recipe is absolutely fantastic. The instructions themselves are simple and easy to follow, and the result is absolutely worth the limited amount of work it takes to produce.
A few modifications were made in the example displayed in the picture (less feta, frozen corn, and dried basil were used due to availability) but overall the flavors worked together wonderfully and it was delicious enough for seconds.
It does call for what seems like an excessive amount of feta (which is why less was used in this version) and olive oil (that pictured uses 2 tablespoons instead of 3) but those are quick and easy fixes that still resulted in an amazing and not too heavy pasta dish.
