In a college town, there is no surprise that the Stadium Market is a frequent stop for many young Ann Arbor residents. Known for their vast beer and liquor selection, the local establishment has made quite a name for itself. One could spend hours carousing the isles looking for the perfect adult beverage pairing for a special meal. What some neglect to realize, is the back of the store is home to one of the best deli’s in town, and what is even more surprising is their specialty: high quality gluten-free products.
Jennifer Te’Stroete, a four year experienced manager at Stadium Market, took the time to explain their unique menu. It all started with a concerned mother and a son who couldn’t tolerate gluten in his diet, “We had a regular customer come in and asked for a gluten-free pizza. Her son could not participate in the pizza parties at school.” Since a Dietitian is writing this article, here is a little insight behind the physiology of a gluten allergy, also known as Celiac’s disease. Gluten is a protein found in wheat, rye, and barley. Some people cannot tolerate this protein, therefore ingesting it results in damage to the small intestine and interferes with absorption of nutrients from food.
The market didn’t stop at perfecting the gluten-free pizza, as Jennifer explains, “We now expanded to our sandwiches and pre-made entrees.” The bread is ordered from a company based in Denver called, Udi’s. They work hard to meet their customers’ needs, “We are always experimenting with new products. Last year we added gluten-free potato gratin as a staple in our menu. We listen to what our customers want. If they say, ‘I wish we could get this’ we tell them come back in a few days and we will have it for you.”
Although the gluten-free products give their menu a twist, that doesn’t mean their other items are any less note worthy. For those of you who have the gut to tolerate wheat products, their original pizza crust could compete with any local pizzeria up for the challenge. No meal is neglected at this joint. Their breakfast sandwiches are a must for students rushing to and from class. However, Jennifer says the most popular day for a breakfast sandwich is late Sunday morning. In fact, it is not unusual to see the same customer who purchased their favorite beverage for a night on the town Saturday return for a much needed sandwich on Sunday (the reasons for this should be apparent). The sandwich is comfort food at its best. Nothing fancy, but the ingredients make up for the lack of frills. Ingredients include 3 eggs scrambled with your choice of American or cheddar cheese, with bacon or sausage, all of which is held together by a choice of rye, wheat, sourdough bread or a bagel.
