About the brewery: Swamp Head is located in a warehouse style complex just off of I-75 near the Archer Road corridor in Gainesville Florida. The brewery is located in the back of the complex and you wouldn’t know it was there unless you were actively looking for it.
The taproom is a fairly narrow room with a beautiful driftwood bar-top. The brewery itself consist of a 10 barrel system (31 gallons per barrel) and has an open-air setup that is all too inviting with the bay doors open.
The beer: This light bodied brew pours a hazy deep yellow with very little head. It has a strong lemon nose with hints of honey and a tart, earthy, and downright funky taste.
Food pairing: When pairing with sours, and particularly Brett beers, you want to aim for rich food and cheeses. With this one try brats or pungent cheeses such as Sharp Cheddar, Blue, or aged Brie.
The final word: This beer is phenomenal, with a wonderful mix of everything that is right about a great Saison coupled eloquently with the funkiness of the Brettanomyces yeast. This bottle was only available in their taproom and will likely be sold out very soon.
