As far as restaurant institutions go in Phoenix there aren't too many that date back to the days before 1990, but Richardson's http://richardsonsnm.com/ has been serving New Mexico style cuisine since then. Even a devastating fire a few years ago, did not stop it from rising from the ashes after all this is Phoenix. In its current location just up 16th St. from the original location, regulars and new customers pack this place on a daily basis. The menu has 4 delicious sounding burgers (all $13) but I'd heard about the Green Chile burger so I decided this was the time and the place to go for it.
The method of cooking this 1/2 pound burger is to grill it over pecan wood then serve it on a toasted Sesame seed bun and cover it with a roasted green chile and melted Jack cheese. No lettuce, tomato or onion garnish just the burger and a side of crispy, hand cut French fries. If you're expecting a spicy kick with this burger you would correct as the whole green chile serves its purpose and so does the melted cheese offering a slightly cooling and creamy texture and taste. This burger was perfectly grilled medium rare with its pink middle. The burger to bun ratio works as the burger fits perfectly between the buns offering little mess a savoring all flavors on every bite.
I like my burgers medium rare with pink in the middle, but I like my French fries crispy and light brown on the well done side and these were hit the mark and could be considered to be some of the best in town. Combine that with the 2 other burgers on the menu that made my mouth water upon reading the menu means I'll be back soon for more.
