Calling all professional chefs, culinary artists, foodies, caterers, cooks, bakers, and contributors to the culinary world; Looking for a superior quality cutting board with a multi-functional design? John Boos & Co.’s Newton Prep Master has consistently proven to be a truly unique and utilitarian cutting board design that promises to be very useful in all aspects of food prep. We each have our own methods to prepare food, but the one thing we all have in common is that we prefer to use tools that make the process quicker; more enjoyable and more convenient.
With that company statement in mind, I set out to test John Boos & Co.'s Newton Prep Master’s which reportedly has amazing features while still being as good as their other boards. Would it prove to be that good? I set out to see.
As soon as I got that big Boos box from the carrier, I unwrapped it, took down my other favorite cutting board - which happens to also be a Boos Block - and replaced it with the Newton Prep Master. I really wasn't convinced; I'd had my original Boos Block a couple of years, it had been cut on, sawed on, poked on, had lemon juice left on it, dough rolled, pasta cut, chicken carved, candy made and cookies cooled on it; it had been my side kick, my sous chef, my rock in the kitchen - could I... Would I replace it? Could all the Boos company says about this Master Board be true? So, I read their next statement (below) and set out to make a big batch of soup.
The Newton Prep Master provides a multitude of favorable facets, one being a sloped juice groove. The juice groove that runs around the perimeter of the 2-1/4” thick cutting board channels juices from the back of the board to the front where it empties into a stainless steel tray. This sloped juice groove feature is precisely why it is called the Newton Prep Master. We can thank Sir Isaac Newton for his contribution to science and to the cutting board name. Gravity forces the juices down the sloped juice groove and into the pan. Slide the stainless steel pan out from under the cutting board and drain to a pot or skillet to make a quick roux or stock. The Newton Prep Master is a perfect tool to cut melons, (especially watermelon) citrus fruits, or tomatoes; any foods that contain a high water content. The stainless steel pan can be used for scraps, or to transport diced, prepped food.
Oh my! It was instantly clear what the scientists behind the board meant when they named this baby the Newton. I cut tomatoes, lemons, oranges and meat, and magically, all the juices flow straight to the drip pan, leaving juice that would normally be wasted, to be poured back into your pot. Then I cut cabbage, onions and garlic, dropping my waste into the little catch pan. It is better than Rachel Ray's Garbage Bowl! It takes up no more room on your counter, as the pan, as shown in the photo is right under the bottom of your board. The board is roomy and the most gorgeous wood tone you've ever seen, which perfectly matches my wood cabinets - even better than my trusty old Boos block did! I was sold on this beautiful lifesaver the moment I started using it. My old block will find a home in my house as a craft surface now: believe me, it can still take a lot of punishment. These blocks just do not wear out.
Take it from me, You can bet Boos Blocks are the best boards you can buy for your bucks. And is a fabulous find for Holiday Gifting!
Chef Richard Blais states, “The Newton Prep Master by John Boos, is a winner for its hefty weight juice groove and built-in pan to capture juices. “This makes it easy to save the juices that run off when you’re carving your roast chicken or prime rib,” he said. “Refrigerate and use the juices the next day to sauté your asparagus.” Professionally, Mr. Blais prefers heavy wooden boards because “they don’t slide around,” he said. “And I like the way knives feel on them. I cut cleaner and chop better,” he said.
Reverse the Newton Prep Master to reveal a flat cutting surface with a stainless steel pan and inset. The flat surface can be used to prep fruits and veges. The stainless pan can easily transport prepped fruits and veges.
Use your board on the flat side to roll out dough, knead pasta, cut brownies.
Another use: Fill the pan with flour or panko bread crumbs and coat/dredge your chicken, fish, or pork chops.
