While on a recent shopping trip at Super Target we stumbled upon a gluten-free product we have never seen before by A Taste of Thai - toasted coconut fortune cookies. Yes, you read that right, fortune cookies that are gluten free and this Examiner believes are the first ones produced for retail sale.
A box of gluten-free fortune cookies contain 12 individually wrapped cookies complete with fortunes. These fortune cookies are much smaller than a wheat-based one (half the size of a finger) and they are shaped like little logs. They are made using: coconut milk (coconut, water), tapioca flour, coconut (palm) sugar, egg, black sesame seeds, and salt.
These cookies have a great coconut smell and taste. They are crisp and flaky with a texture similar to that of a rolled wafer cookie and they have a fabulous mouth feel. They taste like a pleasantly sweet coconut cookie and they are delicious. This Examiner only started liking coconut once she was on the gluten-free diet, but it is a taste some people do not like.
Can't wait to make Pad Thai and have a fortune cookie (or a couple) for dessert. These fortune cookies would also be great with tea, or with a traditional Thai dessert like sticky rice with mango (recipe on the box). If you have been missing fortune cookies, visit the International section of your local grocery store and pick up a box.
Hopefully they will make the fortune cookies bigger at some point, but this Examiner is thankful that my gluten-free wish list has one less item.
