Andrea Franchetti, owner of Tuscany’s Tenuta di Trinoro, established Passopisciaro on the slopes of Mount Etna in Sicily. Buying existing wineries with decades old vines, he has raised the bar of Sicilian winemaking using native grapes that love Etna’s volcanic soils and microclimates. Making wines with steep slopes on an active volcano is not easy, so dedication to the craft is serious business and attention to detail is needed to make great wine here.
His Bianco Guardiola, 2011 is 100% Chardonnay and the attention to detail is evident here. It has a pale straw color and aromas of lemon peel, cut grass and minerals. The palate starts with that tart lemon and lime with green apples and plenty of minerals to balance the citrus. The wine is aged in large oak barrels and cement before being bottled. This aging allows the fruit to show its true characteristics. The crisp acidity keeps the palate excited and happy.
Enjoy Passopisciaro Guardiola with seafood that have a citrus sauce, I would even try this with ceviche on a warm day. Also enjoy this with chicken in a cream sauce, the crisp acidity will cut through the richness and get your palate ready for the nest bite.
