It is rare that a little out of the way dining spot continues to do the right things – such as Jimmy’s
Egg, a breakfast inn of dining. Again and again my spouse and I return to be warmed by the hospitality, delectable entrée’s and the heartwarming welcome back. Jimmy’s dining is more than just dining fare, it carries with, as Emeril would put it, a touch of love in the experience and we have come often enough to become a part of Jimmy’s extended family.
Breakfast at Jimmy’s is never ordinary; rather, it is punctuated by two specialties of the house: a two egg breakfast with hash browns, toast or pancakes and your choice of meats which include thick bacon strips, ham or steak. The second entrée of choice for us is Jimmy’s ‘Garbage’ breakfast, a massive plate of eggs, hash browns, toast or pancakes and a down home heaping of beef – what a way to spend breakfast. Afterwards, if you have room, Jimmy’s has added a new cinnamon roll the size of a small children’s three wheeler – they will also supply a truck dolly to move you to your car.
We truly enjoy our dining experience at Jimmy’s, it has become out home away from home, then too, it would be remiss of us not to forget our friends Louis and Debbie and a host of others too numerous to mention; better yet, why don’t you saddle up ole paint and saunter down to Jimmy’s, put on the feed bag and enjoy…..1
Home Fries the British way
1 large Russet or two Golden potatoes (more if bigger crowd)
Scrub potatoes then peel to ensure readiness for cooking. If you have a slicer and food chopper, time will be saved for next step. Slice potatoes uniformly ½” thick, then cube 3’8” to ½”. Using cold water, rinse potatoes several times eliminating starch build up. After rinsing, refill bowl with cold water again and allow potatoes to rest in water – this to raise sugar content to surface of potatoes. In heavy towel, dry potatoes thoroughly. In heavy pan, heat enough oil 260 degrees and add potatoes, baste 3 to 5 minutes, move temp to 375 degrees, fry about 3 to 4 minutes (fry’s will be slightly tannish), remove to paper towel sieved screen, salt lightly and serve warm. ….
