Since the first of the year, my husband and I have gone 99% vegan...because being eating gluten-free wasn't challenging enough! We decided to go primarily vegan for the health benefits associated with the nutritional lifestyle.
One of my favorite gluten-free friendly Mexican restaurants had always been Mad Mex in the University District. I knew they were vegetarian friendly, but wasn't sure just how vegan friendly they would be. We were craving their amazing nachos and decided to risk it. We were glad we did!
I asked our server if we could replace the sour cream and cheese with spicy spinach and tofu because we had recently gone primarily vegan. She responded with, "we have vegan cheese and vegan sour cream, would you like that?"
Would I like that? I would LOVE that! And we did.
Mad Mex has a great gluten-free friendly, vegetarian and vegan menu. If you get a craving for Mexican, I highly recommend it.
