            Wheat Bread with Flax Seed and Honey

            Ingredients

·         1 cup bread flour

·         ¼ cup whole wheat flour

·         1 teaspoon salt

·         ½ cup ground flax seeds

·         2/3 cup water

·         1 cup “raw” honey

·         1 teaspoon instant yeast

Directions

In a large bowl, combine bread flour, whole wheat flour, salt, Flax Seeds and yeast.  Stir in the water and honey until it is mixed thoroughly.  Note:  The dough is not terribly moist.  The dough should be tacky, but not too sticky.  The dough should hold its shape when rolled into a ball.

Knead the dough.  Once all the ingredients are combined, place the ball into a greased bowl and cover with plastic wrap.  Let rise for an hour to an hour and a half.

Shape the dough into one large loaf or two small loaves.  Cover with plastic and let rise for another hour. 

Preheat the oven to 425°F.

Score the top of the loaves and brush with butter.  Bake the loaves at 425°F for 20 minutes, turn the loaves and bake for another 20-25 minutes or until nicely brown and done. 

Serve with fresh jams or "raw" honey.
