A large scoop of ice cream in between two warm, gooey cookies is heaven to the palate, but when one has choices the experience becomes almost magical. It may sound a tad silly, but when Baked Bear opened May 2013 in Pacific Beach a childhood fantasy became a reality. The concept of owning a shop that only makes ice cream sandwiches is quite ingenious, because honestly why settle for a cookie when one can have two and why have ice cream in a cup when it can be nestled between moist cookies, waffles, or brownies.
While not very spacious, the gourmet flavors Baked Bear offers makes up for the lack of seating. The first step in building a ice cream sandwich masterpiece is to choose the cookie flavors, plural because one can have two different flavors of cookies or even substitute a warmed brownie or waffle for a cookie.
Cookie flavors include classic options such as chocolate chip, peanut butter, and snickerdoodle, but also unique choices like red velvet, white chocolate macadamia nut, funfetti and a cookie of the week. The choice of ice cream is a much more difficult decision as there is not a bad flavor to choose from. Choices include: mint chip, mango sorbet, strawberry, butter pecan, chocolate chip, rocky road, cookies n’ cream and the list continues!
Honestly, a cookie sandwich for $2.95 or a cookie and waffle/brownie mix for $3.95 there can be no bad choices with flavor combinations. The sandwiches are served in trays so less ice cream coated hands, and Baked Bear now has the option to roll a sandwich in toppings so putting sprinkles with ice cream when not a child is perfectly acceptable. If this doesn’t have taste buds salivating, then perhaps a tasting is required. The wait is not long, but beware of the late night crowd, they can be quite hungry!
