If you’re craving great food, the Hatch Cover Bar & Grill is here to satisfy. They are located in south Colorado Springs at 252 E. Cheyenne Mountain Blvd. behind UMB Bank. Their hours ar 11am-2am 7 days a week. It’s a great place to unwind after work, catch the game, or throw a party. Hatch Cover provides a friendly, relaxing, laid back atmosphere. You can either sit inside, or outside on their patio. Their menu is very diverse.

You have six different 10” personal pizzas (no substitutions) to choose from. The one I think is, and should be their signature pizza is the Chili Cheese Dog ($9.99). If you love chili dogs. You will love this delicious creation. Shredded cheddar/jack cheese blankets the sliced hot dogs, and the house made red Texas chili. The chili alone is fantastic. It has the right blend of spices with a nice noticeable, but not overpowering zesty kick.

There’s also a nice mix of Skins and Fries to munch on. The Chili Cheese Fries ($5.99) are excellent. My personal favorite is the Gravy Fries ($4.99). Haven’t had these for years. Great to find a place that serves then, and knows how to do them right.

Another mouth-watering appetizer is their Crab Stuffed Mushrooms ($7.99). They are to-die-for!! Button mushrooms stuffed with crab, then topped with a garlic cream sauce. To compliment this dish, I highly recommend ordering a batch of their freshly made garlic bread for an additional $1.50.

Hatch Cover’s burgers are some of the best in town. They half pound patties served with lettuce, onions, pickles, and tomatoes on request only. If you’re on a special diet or a vegetarian, you can substitute a turkey burger, Boca burger, or chicken breast at no extra charge. Add an extra patty for $2.00 more. I love a good Mushroom Swiss burger ($8.19). The chef here knows how to prepare them properly. With sautéed mushrooms, Swiss cheese, and nothing else. The burgers are made from 100% Angus beef. Other excellent choices are the Frenchy’s (sautéed mushrooms and onions with melted blue cheese crumbs) for $8.79. Then there’s the Alamo (chili {Hatch green or Texas}, pepper jack cheese, and jalapeño) for $8.59.

As for the sandwiches, I suggest The Hatch Grinder ($8.99). It comes with hot salami, pepperoni, melted pepper jack, lettuce, tomato, red onions, pickles, and chipotle aioli served on a toasted hoagie roll. Your mouth will thank you for it. If you’re really hungry, go for the Dagwood ($9.39). Most generous portions of roast beef covered in melted Swiss cheese, lettuce, tomato, red onions, pickles, and horseradish cream sauce. All on a toasted hoagie roll. If you come away from this sandwich hungry, that’s your own fault, or you have one monster appetite.

Of course you can’t go to a bar & grill without trying the wings. Hatch Cover offers their wings only one way, traditional bone-in. You can get them for fifty cents per wing all day, every day with ranch or blue cheese dip. They will run you $5.00 per order of 10 for dine-in. To-go cost you $7.99. The wings are tender, juicy, goodness. Choose you sauce; from BBQ, spicy BBQ, teriyaki, mild, medium, hot, and fire. And when they say fire, they mean FIRE!!! If it’s too much for you be aware, there are no refunds. I tried a thimble size sample of the fire sauce. Two dips of my finger were enough for me. The after burn lasted a good five minutes. If you love hot and spicy, give it a try if you dare.

For dessert you an order a heavenly warm Chocolate Lava Cake ($4.19) with hot fudge in the middle. It wouldn’t be a lava cake otherwise, topped with whipped cream and drizzled with chocolate syrup. Or try their Xango for $4.29. Its two slices of New York Style cheesecake wrapped in a tortilla and deep fried. Then rolled in cinnamon sugar, and covered with whipped cream, and chocolate syrup. Xango is pure decadence. It is sure to satisfy any sweet tooth.

You will not go thirsty here at Hatch Cover. You have over 40 different domestic and international beers to choose from. There’s also a plenty of cocktails and shots as well. Play rock, paper, scissors with the bartender for half off drinks on Tuesdays after 4pm. If you prefer, they also off Pepsi products, Baylans Bottled Soda, Zing Teas, bottled water, Sioux City Sarsaparilla. And some choice non-alcoholic brews.
