You may be familiar with Chef Fred who is the mastermind behind the popular “Be Your Guest” which offers personal chef services at private residences and catering services. In addition to the full service restaurant and bar which is open every day expect Monday, Chef Fred offers onsite private cooking classes, and hosts parties and special events for discerning clients at the restaurant.
To say that Bistro Fredo is “fabulous” only begins to scratch the surface. Located on 0.5 acres (2,550 sq. m) in the heart of the city near Thong Lor, it is truly an oasis. Upon arrival you are beckoned in by the tranquil gardens full of mature trees and tropical foliage. There is an inviting terrace and deck with comfortable seating for dining, along with an aqua blue swimming pool that can be utilized for private parties. The restaurant itself is located on the bottom floor of a white modern two story home that features plenty of glass windows with views to the garden. Inside the color scheme is bright and bold with a warm and unique design style accented by the owner’s eclectic artwork and collectibles from around the globe. The menu at Bistro Fredo was inspired by Chef Fred’s grandmother Renée (from Normandy, France) and incorporates her traditional French recipes that have been handed down in the family for generations. “I believe food is a way to promote French culture”; shared Chef Fred, “We make home-style grandma food that is made with love”.
The style of cuisine is called “Bourgeoise” which literally means traditional French comfort food that is comprised of the best dishes from all the regions in France. They additionally offer internationally inspired French fusion food with influences from Thailand, Spain, Morocco and Italy. Only the freshest ingredients are used and Chef Fred works in tandem with Thai Chef Somsak Kaew who is just as passionate about cuisine. “Making great food is the same as making love to a women” shared Chef Somsak, ”you want to make sure to get it right”.
Start the meal off with a signature cocktail such as the Kir Royal which is a heady combination of black currant liqueur, white wine and champagne. This bubbly concoction is well matched with a piping hot bowl of French Onion Soup. This classic favorite is well-executed with a harmonious interplay between the caramelized onions, the flavorsome broth and the crunch of the cheesy croutons. Another nice starter is the Grandma Renee Croque-Monsieur which is an open-faced hot ham and cheese sandwich. They use only the finest ham imported from Paris with the addition of a rich béchamel sauce that makes it all the more decadent. For wine I highly recommend the Vin 'Alsace Scherer Riesling, 2011 from France which is floral and light without being overly sweet. Next try the Pan Seared Foie Gras Ernest Soulard. This is a perfectly seared portion of thickly sliced foie gras served with an ingenious spicy curry sauce. The flavors are reminiscent of Thailand, and the chili heat cuts through the richness of the liver without overpowering it delicate flavor. Another highlight is the Seared Scallops w/Black Truffle & Yuzu Sauce which is the kind of dish that leaves you speechless and only able to utter moans and sighs of pleasure. The scallops imported from the USA are exceptional with a subtle sweetness and bold flavor that you rarely find, and the truffle sauce can only be described as ethereal. For your main course opt for the Lamb w/ Spicy Merguez Lamb Sausages & Couscous. This is a hearty stew that is the epitome of comfort food at its best. Be sure to save room for dessert as the Crepes Suzette are some of the best I’ve had in a while, and the Black Truffle Ice Cream & Speculoos Ice Cream w/ Profiterole is pure genius. The speculoos ice cream tastes a bit like a gingerbread biscuit and is scrumptious with the accompanying chocolate sauce. The truffle ice cream is a masterpiece that admittedly left me a bit weak in the knees. It’s a creamy and savory delight that you will remember along after the meal.
