The Venue

Brio is the only Italian restaurant in the Thonburi area of Bangkok, and is renowned for transporting diners into the heart and soul of Italy. Brio embraces the warmth and energy of the Italian way of life wholeheartedly, and is invitingly designed to reflect the rustic charm of a Tuscan villa. The emphasis on elegant authenticity is also evident in their culinary offering of trusted age old recipes and innovative creations, which are hand crafted from the freshest ingredients and finest imported Italian delicacies. The Chef

Chef Danilo Sangrigoli is a talented chef with a big personality and an infectious generosity of spirit. He exhibits a straight forward and simple approach that takes advantage of seasonal cuisine as it becomes available and is rooted in time honored traditions and techniques while still managing to be creative and playful. “I am passionate about creating an authentically inviting Italian atmosphere in Brio’s rustically elegant dining room and crafting original Italian tastes from the freshest ingredients in the open show kitchen” shared Chef Danilo.

Born in southeast Italy, Chef Danilo speaks Italian, German and English and brings more than 30 years of experience in five star hotels and leading restaurants, as well as a host of pizza champion titles. Chef Danilo is a three time world pizza champion in "speed and quality baking" and is the first competitor in pizza history to win both the acrobatic and baking titles in Italy's Pizza Championships. As a certified master of the "Scuola Pizzaioli Italiana" in Venice, he has impressed many with his jaw dropping pizza-making performances. He additionally won the title of European Champion at the 2006 Pizza World Cup in Barcelona and held the Guinness World Record for baking 504 pizzas in 103 minutes.

In addition to showcasing his impressive skills at world class competitions, Chef Danilo was part of the jury at the Pizza Expo in Las Vegas. He has also held pizza seminars, launched restaurants and overseen new pizza concepts in Russia, Riad, Germany, Abu Dhabi, Switzerland, the Caribbean, Brazil and Thailand. The Cuisine

The menu is a veritable passport to regional Italian comfort food, and you will discover tantalizing cuisine that fills you up and satisfies you on every level. A prime example of this is the Rocket w/ Burrata which is a soft and luscious fresh Italian cheese made from mozzarella and cream. The creamy cheese is well matched with the peppery lettuce and is a proud testament to delectable simplicity on a plate. Another classic dish worth trying is the Eggplant Parmigiana which defies expectations with a harmonious interplay of subtle textures and temperatures. Another unforgettable offering is the Tegamino di Fungi which is a wild mushroom bruschetta with cream sauce. Paired with a white wine such as Sensi Pinot Grigio Collezione Veneto IGT, 2011 from Tuscany, it becomes a rich and decadent treat that far surpasses the sum of its humble parts. The earthy mushrooms and the rich, cheesy sauce leave you feeling as if you have indulged in something delightfully sinful. For red wine opt for the Sensi Cabernet Sauvignon Collezione, 2011 from Tuscany along with a pasta course of homemade Tagliatelle w/ Duck Ragu. It’s a heady mix of chewy pasta swimming in a complex and savory sauce that leaves you with the impression that a lot of time, effort and love have been imparted in the dish.

You don’t want to miss the alchemy of Chef Danilo’s pizza making skills which are a wonder to behold. The process is as entertaining as it is tasty and each hand made pizza is cooked for only three minutes at 350 degrees in Brio's wood fired oven, resulting in a thin and crispy crust that is second to none. I recommend the Anantara w/ Tomatoes, Mozzarella, Veal, Herb Butter, Garlic & Chili as well as the Frutti Mare w/ Tomatoes, Mussels, Prawns, Squid, Herb Butter, Lemon Peel & Garlic. Chef Danilo's creativity is also apparent in his Thai inspired Tom Yum Goong Risotto which is exceptional. There are several tasty options to choose from for dessert, and you won’t be disappointed if you opt for a classic Tiramisu which is an excellent version. Make sure you take advantage of the wide selection of Grappa’s (alcohol distilled from the stems and stalks of the grapes) that Brio has on offer as after dinner aperitifs.

The Verdict

There are more than a few good reasons to make the trip across the river and treat yourself to a wonderful Italian meal at Brio. Chef Danilo and his exciting new menu are the main attraction. There is a fabulous new energy that is palpable and there is an evocative vibe of “family” that is truly compelling.
