Centro Concina Mexicana, located in Midtown Sacramento, is a funky Mexican restaurant created by the Paragary Restaurant Group. While the attire is casual, the restaurant is trendy, a little upscale, and beautifully decorated with metallic touches and crucifixes.
The food at Centro is exceptional; all items are painstakingly prepared before arriving at your table. For example, their mole, which is the generic name given to sauces used in Mexican cuisine, takes at least 8 hours to prepare, contains 29 ingredients, and is made fresh daily. The level of care that they put into their food comes out in every bite.
Centro Concina Mexicana is known for two things: their carnitas and their tequila, both of which are must try items. Their carnitas are flawlessly seasoned and are cooked to perfection so that they dissolve in your mouth. If you are not someone that can handle spicy foods, then let your server know as some of the carnitas options come with a salsa that can be a on the hot side. If you don’t eat pork, then order their yellow fin or salmon, both of which are exceptional.
There is a reason that Centro is known for its tequila - with more than 100 different types of tequila, Centro is already set apart from the rest; however, they also have at least 10 creative infusions that are made in house. Crafted with seasonal fruits and vegetables, their tequila infusions make incredible mixed drinks, and even better sipped alone.
The only negative aspect of this restaurant is its overuse of raw onions. They are present on the guacamole, which would be amazing without them, in their burritos, on top of their entrees, and on almost every single taco. If you are someone who is sensitive to raw onions, then pay close attention to what you are ordering.
