Cantina Tollo has a mission, tell the story of Abruzzo through its native grapes.
One of their white grapes is Pecorino. No one is quite sure how the grape got its name, one story is that the sheep (pecora) would stop and eat the grapes while being lead out to pasture. Another legend is that the bunches of grapes resemble a sheep’s head.
Cantina Tollo, Colle Secco, 2012 is a great example of how pecorino can be made into a nice crisp food friendly wine. It is light straw yellow with aromas of lemon drop candy, freshly cut grass and minerals. The palate more or less follows the nose and it has a short tart finish. It’s nice acidity is a great palate cleanser to enjoy with salumi, cheeses and even fish prepared in a light cream sauce.
