Friends turned us on to Cafe Rio and now my husband and I eat at the Centennial location every time we make a trip to Costco! Yummy!
Handmade Flour, Wheat or Corn Tortillas set the stage for the addition of your choice of meats, salsas, and toppings. Choose your meat - Fire Grilled Steak, Fire Grilled Chicken, Sweet Pork Barbacoa, Chile Roasted Beef or Pulled Chicken Breast. Add Cilantro Lime Rice, Black or Pinto Beans. Get it Enchilada style with Hot, Medium or Mild Salsa - and don't forget the Pico de Gallo.
At Cafe Rio, they hand roll hundreds of tortillas a day made right in front of you on their super hot, amazing Comal. The Comal is a big round cooking surface that every one of the tortillas is cooked on. Sauces, dressing, desserts? Everything is fresh and made daily. It is fun to watch them prepare your selections and even small children enjoy being boosted up to watch the friendly staff at work hand-crafting your food!
The theme of the restaurant is rustic Tex-Mex, clean and attractive. Although the tables do not move, we were still able to comfortably accommodate our group.
