In February 2014, Bruxie, the waffle sandwich icon of Orange County (coming soon to San Diego and Denver), introduced The Bold Blend - a new custom crafted coffee. Bruxie Partners, Kelly Mullarney and Dean Simon, are always reaching for the next level. What would be better with waffles? Coffee, of course! Kelly oversaw the 4-month process from bean selection to blend to roasting. The locally roasted coffee features a proprietary blend of 100% fair trade imported coffee beans. The days of coffee urn sitting on a warmer for hours or as the Europeans like to call American coffee, sock water, are a thing of the past. More and more restaurants are taking pride in serving a really good, nay, a great cup of coffee to their patrons.
The Bold Blend of consists of Sumatra, Brazil, Ethiopia, and Costa Rica beans along with varying roasting techniques and styles to create an awesome experience. Sumatra explodes with flavors and aromas of cedar, rich tobacco, dried peppers, and citrus – providing a long finish to the coffee. Brazil imparts flavors and aromas of almonds, dark chocolate, and butter – providing delicate nuances adding a balance that layers well in the blend. Ethiopian exhibits flavors and aromas of blueberries and kiwis – providing a vibrant and invitingly sweet scent. Costa Rica exudes flavors and aromas of caramel, nuttiness, and citrus – providing a sweet flavor. When you put these flavors and aromas together, it’s just makes you perk up. After the first pour, I sat there for a few minutes and just enjoyed the aroma. Just like a fine wine, your senses will start to pick up on all of these aromas. I am very picky when it comes to coffee. I don’t like bitter or high acidic coffee and neither does my stomach. Kelly did a fine job picking out the blend and it shows with this perfectly brewed coffee. All the flavor notes work together with only 2 sugars and a little bit of cream. Most coffees and espresso drinks I order in the states need 3-4 sugars and at least 4 short pours of cream. The cream and sugar actually accentuated the caramel flavor and making it even more enjoyable. Bruxie also offers full barista service at all locations – espressos, cappuccinos, and lattes. The espresso is created from the same blend used in The Bold Blend coffee.
Watching your caffeine intake? Not to worry, The Bold Blend Decaf is available as well. Using a Swiss water decaffeination process, the decaf has the same flavor specs as its caffeinated big brother. Kelly adds, “Roasted with similar techniques and beans, this coffee over-delivers, compared to other decaf options available.”
Perfect menu pairings with The Bold Blend would be Bacon, Egg & Cheddar, Country Sausage & Egg, Nutella & Banana, and/or Seasonal Crème Brûlèe.
