With more than 194 restaurants in 34 states, Bonefish Grill has opened its first location in California at The Market Place in Tustin. With a focus on sustainable fish and an organic chic decor, the new 5,200-square-foot location hopes to attract guests that are looking for a comfortable dining experience with a reasonably priced customizable menu.
The Fresh Menu
Bonefish Grill's commitment to serve the freshest ingredients available starts with menu items such as Pecan Parmesan Crusted Rainbow Trout Sautéed and topped with artichoke hearts, fresh basil and lemon butter or the Cilantro Lime Shrimp Salad made with roasted corn, black beans, feta, grape tomatoes red onion, tortilla strips and topped with a cilantro lime vinaigrette. To bring out the best flavor, some menu items are cooked on a wood-burning grill made from cypress wood, which is a sustainable resource that is responsibly managed.
Corporate Chef Mark Adair strives to offer local fish through vendors such as Santa Monica Seafood in an effort to serve responsibly sourced seafood. Depending on the time of year, Chef Mark says some of the fish on the menu may be caught and served the same day. "In order to be custodians of the environment, we try to create relationships with local fisherman so that we can purchase well-managed, sustainable fish for our menu," said Chef Mark. He also tries to procure fresh produce from local farms such as Chino Farms in San Diego.
For those who choose not to indulge in seafood, beef or poultry, menu items such as the salads, tacos, and pasta dishes can be customized to fit vegetarian lifestyles.
Local Wines and Cocktails
The festive bar boasts 30 wines by the glass including Hidden Crush, a proprietary Bonefish Grill wine created by various Central Coast wineries and offered only during crush season. They also focus on locally crafted beer, such as Sierra Nevada Torpedo IPA in the Tustin location.
Menus may vary by region depending on what is available. At the Tustin, California location they use fresh Meyer lemons in the Meyer Drop Martini. To promote ocean conservation, Bonefish Grill will donate $1 to Ocean Trust for every Ocean Trust Mango Martini sold. The martini is made with Absolut Citron vodka combined with freshly muddled mango and orange with a surprising twist.
The Eco-Friendly Decor
Contrary to the other locations, The Tustin Marketplace Bonefish Grill features a new contemporary design by Flavia Bisi. The decor includes wood booths, walls, and chandeliers, a granite bar, and slate floors that give the eatery a casual, yet sophisticated feel for friends to gather in a relaxed environment to share good food and great conversation. With a fireplace, outdoor patio, and 42-inch TVs, the restaurant will appeal to couples enjoying a romantic date night, women gathering for a girls' night, guys wanting to enjoy a beer and the latest sporting event, or families looking for a kid-friendly place to eat. All Bonefish Grill locations will undergo renovations to update their design to the new contemporary organic feel.
