Indian food is delicious but notoriously difficult to cook or at least it is famously perceived that way. With so many spices and an array of ingredients that aren't common to the typical Floridian and most Indian meals seem to have plenty of accompanying dishes that would require advanced multitasking. It can be overwhelming, that is, until you take one of Ayesha's cooking classes.
Ayesha's Kitchen is located in Pinecrest, Ayesha offers various Indian cooking classes right in her house, she offers everything from different types of traditional curries using chicken or lamb to vegetarian and vegan dishes. There is something for everyone. She has a fuss free approach which puts everyone at ease and gets across that Indian cooking, in fact, does not need to be complicated at all and you do leave feeling like it can be achieved in your very own kitchen.
I took a class consisting of making traditional curry chicken with jeera rice, raita (a salad with yogurt and vegetables), potato bhaji, an appetiser of onion pakoras with cilantro chutney and a kheer (traditional Indian rice pudding) for a sweet end. This looks like a ton of dishes to cover in a three hour period but everything was actually done under two hours, leaving the last hour to pig out on all this delicious food. Ayesha did an excellent job of explaining every step throughly using humour, she is very engaging and explained the different health benefits of spices such as turmeric, ginger, asafoetida and curry leaves. The class was educational on many levels and personally it left me wanting to learn more.
Ayesha's classes are perfect for anyone wanting to learn about Indian cooking but don't know where to start or find it too overwhelming. A lesson with Ayesha will give you the knowledge and confidence to pursue Indian cooking, not to mention it's a fun way to spend a morning or evening. I definitely left her kitchen inspired enough to want to host my own dinner party with my new found knowledge, watch this space....
