Every once in awhile to pair with dinner you are in the mood for a nice wine, but not sure which color or style to choose. Think about a fish dish with assertive flavors, maybe Livornese style, tomatoes, capers and black olives. A white with nice acidity would be a good choice. For red, a lighter red, a nice Pinot Noir would do. I have another choice though, a rosé Pinot Noir.
Ambo, Pinot Noir Rosato, 2012 is the perfect choice. Bright salmon pink in the glass with aromas of rose petals, cherries and strawberries. The fruit flavors follow from the nose to the palate and wild flowers. The finish has nice acidity to balance the fruit flavors. It has a medium body and a medium finish.
Never fear using a well made rosé when you’re not sure if a red or white is in order.
