The New York-based George Martin Group has made its Maryland debut with the opening of Grillfire within the full-service luxury Hotel at Arundel Preserve in Hanover.
An American grill with steakhouse elements, Grillfire is now open for breakfast, lunch, dinner, late-night bar service and brunch at 7793-A Arundel Mills Blvd. It was planned as the place to meet friends and colleagues after work; a place where families can share a good time, and a special place to bring a date. Guests are encouraged to visit multiple times a week.
Overall, Grillfire seats 235 people. Inside, the restaurant can accommodate seating for 185, which includes a private room for 50. Patio/outdoor seating can accommodate another 50.
The decor combines the energy of a public gathering space with casual comfort for its guests. Cozy furnishings and residential-quality lighting further enhance the warm and inviting ambience. It was designed by Blase Gallo, who has designed for the George Martin Group for approximately 15 years.
A chef-centric, owner/operated dining venue, Grillfire is known for high-quality and innovative meals served with attention to detail. The restaurant features a diverse menu of items prepped on-site from scratch with $30 and under pricing.
Executive chef is Frank Greco, who brings nearly 30 years of experience in the restaurant industry. A graduate of the New York Institute of Technology and part of the George Martin Group since 1989, Chef Greco indicates that he intends to
“incorporate Maryland’s passion for crabs into the entrees including the embellishment of prime-aged filet mignon and the presentation of lump meat crab cakes and crab and shrimp cocktail.”
A sampling of dinner entrees includes molasses and soy-marinated skirt steak, slow roasted maple brined pork chop fettucine with sea scallops and jumbo shrimp and crabmeat crusted filet mignon. A variety of burgers and sandwiches are available including black label Wagyu beef burger, veggie burger margarite and seared tuna wrap. The Kid’s Menu features such items as macaroni and cheese, sliders and a 5-ounce filet mignon.
Specialized desserts include Molten Chocolate Lava cake and Caramel Apple Upside Down cake, as well as the cupcake of the day. The list of specialty drinks includes the Fizzante Mojito, Sugar Daddy Sidecar and Cabo Raspberry Margarita.
