The mantra of Max's Wine Dive is "Fried chicken and champagne? Why the hell not?". A view toward food and wine like that certainly won't hurt Max's chance to become an Austin hot spot.
Officially opening its doors on May 12th, the restaurant has seen a successful soft start. The menu is attention grabbing, with unusual dishes decorating each course. Some things I'm excited to see offered are the crispy fried alligator bites with a sweetly spicy Thai glaze, a jalapeño and buttermilk marinated fried chicken served with a bit of chipotle honey and, delights of delights, a Coca-Cola braised pork belly alongside cabbage cooked in Lone Star beer. It doesn't get much more Texas than this menu.
Max's has a substantial wine list, with offerings available by the glass, bottle or case. In this climate of wine bars popping up in spots all over town, they 're sure to offer competitive pricing in order to entice more patrons. A promising menu and a healthy listing of wines is a sure bet that Max's is poised for popularity.
