Don't look at the picture and for a second think this is "Aunt Mildred's" fruitcake. Not even close. Holidays are often about decedent desserts and this easy to make cake certainly qualifies. The annual family favorites are usually taste driven experiences full of seasonal spices and flavors. This Cherry Orange Holiday Cake is a delicious way to proclaim holiday cheer. The fruits and nuts inside provide texture and taste. There should be a a warning, however, once you taste this you may find yourself sneaking away for another piece!

½ cup CherryPharm juice
1 ¾ cup candied red cherries

2 tsp baking powder
1 tsp salt
¼ tsp orange oil
4 large eggs
3 ¾ cup flour

½ cup orange juice
2 cups diced pecans or walnuts

Fruit: combine the dried fruit with the liquid in a bowl (not the candied cherries). Cover and microwave for 1-2 minutes, stir, then cool.

Cherry-Orange Cranberry Relish

CHERRY-ORANGE CRANBERRY RELISH

This recipe comes from a fan who cooks a lot and often looks for ways to make old tastes new again. This particular dish is a replacement for the same old cranberry dressing that goes with all the holiday favorites. There are several bonuses to this tasty treat as well: prep time is fast, can be done a day or two in advance and it's full of all natural, whole food antioxidants to make you feel better about the extra pat of butter on your dinner roll! Here's a change for yearly cranberry dilemma.

UPDATE: Several customers have told Cherrypharm that this is fabulous over a pork tenderloin or as an appetizer with cream cheese & crackers.

CHERRY-ORANGE CRANBERRY RELISH

1 bag fresh cranberries
1-2 whole oranges, quartered
1/2 - 1c sugar
Pinch of salt
1/2c CherryPharm Natural Health Juice or Natural Light

1 Rinse and sort the cranberries and add to food processor. With food processor running quickly add the entire orange slices - rind and all. Add CherryPharm juice. Process until desired consistency - a bit of a slaw appearance (about 1 minute).
2 Remove from food processor and add sugar and pinch of salt (more or less) to taste based on tartness of the fresh cranberries. Start on the low end of sugar because it's easy to add more. You can add a dash of ginger and clove here too if you want!
3 Refrigerate overnight to let the flavors blend.
4 Serve instead of the same old cranberry sauce (or the cranberry
