Raw and cooling foods

Do you ever wonder why it is that in the summer we naturally crave more fresh and raw foods? The reason is simple. These foods have a cooling effect on the body which is often needed especially on hot and humid days. The lightness and high water, fiber and vitamin content work in conjunction to act as our internal air conditioning system during these warm months. At this time of year we also need less dense, high-energy food because we get so much energy from being outside in the fresh air and sunshine. This natural craving also keeps us aligned with the idea of eating seasonally and locally. There are so many farmers markets available in the area that it becomes easy and fun to go and pick out fresh fruits and vegetables on a weekly basis. 

With that thought in mind, there is no better season than summer to have fun creating your own fresh, tasty and simple salad combinations. Simply toss together several of your favorite raw vegetables and some you’ve never used before, mix with your own light dressing or eat plain and you have a perfect meal for a hot summer’s day. Another great option is just dipping fresh raw vegetables into a great dip such as Hummus which also adds a little bit of protein.

Try your favorite leafy lettuce with various sliced, diced or grated vegetables. The possible combinations are endless. Fresh herbs are a wonderful option to mix in, as they are packed full of flavor and can make the same ingredients taste different time after time. Experiment with adding diverse forms of protein to your salads, such as nuts, seeds, beans, tofu, fish or poultry. Adding a whole grain such as quinoa or brown rice can also add some substance to your salad. Pick up a light and healthy dressing at your local health food store, or mix up something easy, like lemon juice, black pepper and olive oil.
