This summer, North Center welcomes new contemporary American spot Browntrout (4111 N. Lincoln Ave.; 773-472-4111), an unpretentious neighborhood gem ready to make a splash in this north side 'hood.
Chef-owner Sean Sanders bewtows the name Browntrout on his restaurant in honor of a memorable meal he shared with his wife while honeymooning in New Zealand, consisting of a simply prepared fresh brown trout with vegetables. Browntrout's focus aims to stay simple, using fresh, local and sustainable ingredients, sourced from the city's own farmer's markets and bakeries. The menu's fresh fish and seafood are caught within 300 miles of Chicago, giving Browntrout a low carbon footprint.
Eats at Browntrout include small plates, sandwiches and a mix of entrees, all-locally focused and affordable for those wanting to keep their wallets full. Sanders hopes to create the greenest restaurant in Chicago, and he's well on his way, with the creation of Browntrout's organic rooftop garden, environmentally sound fixtures and appliances, and he even has capabilities to recycle cooking oil into fuel.
Enjoy this green restaurant and its organic offerings in the truest sense of "green" on Browntrout's outdoor 10-seat patio. If dining indoors is more appealing, choose from one of the 70 indoor seats, including a 14-seat communal table. Browntrout is BYOB with a full bar coming soon.
