The days after Thanksgiving – and Christmas as well – are usually filled with the same tired old leftover turkey sandwiches.  However, there are plenty of alternatives for using up leftover turkey, and one of the best is turkey tetrazzini.  This Spaghetti & Chicken Tetrazzini Casserole Recipe is one of the best and most versatile recipes available.

Almonds vs. Cheese in Tetrazzini Recipes

Although traditional tetrazzini involves almonds, many people prefer to forgo the almonds and top the casserole instead with cheese.  This recipe uses cheese to top instead of almonds, and is one of the best; however, it would not be very difficult at all to replace the cheese with almonds instead.  

Using up More Leftovers

Because of how versatile the recipe is, it isn't hard to incorporate other leftovers into it.  This is especially true of vegetables like leftover celery sticks or sautéed mushrooms or the like.  Turkey gravy can also be substituted for part or all of the sauce in the recipe.

Freezing Turkey Tetrazzini

This spaghetti turkey tetrazzini freezes very well to be eaten later, so you don't have to overdose on turkey all at once.  Prepare as normal, save for the cheese on top, and freeze in the casserole.

Alternately, you can line the casserole dish with saran wrap before filling it (make sure to grease the dish first), and then once the casserole is frozen, you can remove it from the dish and place it in an airtight bag, either a Ziploc or a vacuum sealer if you have one, and freeze that, freeing your casserole dish for use in the meantime, and just place the unwrapped frozen turkey tetrazzini back in the casserole dish when ready to prepare it.  Defrost, top with cheese, and bake as normal.
