This recipe is always well received at dinner parties and cooking classes, and no one ever seems to guess the “secret ingredient” It is a rich and decadent dessert that is healthy enough to eat for breakfast or a snack. This pudding is lovely layered in parfait glasses with berries and chopped nuts, poured into a pie shell as a quick chocolate tart or even spread on morning toast like Nutella.

This recipe uses the raw cacao powder, which is much higher in antixidants, vitamins and minerals than regular processed cocoa. You can find it at Whole Foods, Rainbow Grocery or online at Amazon.

Rich Chocolate Pudding with Fresh Berries

2 Medium size ripe avocados, cut in half, pitted and flesh scooped out
Agave nectar to taste (start with ¼- ½ cup, or used soaked dates, or maple syrup)
1-2 teaspoons extra virgin coconut oil
1 vanilla bean or 1 teaspoon vanilla extract
Pinch of sea salt
dash cayenne
dash cinnamon powder
1 teaspoon of dried or fresh orange zest
1-2 tablespoons raw cacao nibs (optional)
3-4 tablespoons raw cocoa powder (or to taste)
Unsweetened almond milk or water (enough so blender will run smoothly or about ¼ cup).

One cup fresh berries of choice. Raspberries are especially nice with this.

Place all the ingredients into a high-speed blender (I recommend the Vita-Mix) and blend until smooth.

Transfer to individual ramekins or small bowls and refrigerate until ready to serve. Serve garnished with fresh berries and enjoy!
