3 8-oz pkgs low-fat cream cheese, softened
1/3 cup fat-free sour cream
1 teaspoon vanilla extract
1/2 cup Splenda OR 1/4 cup Domino Light
First, allow three 8 oz packages of light cream cheese to sit on the counter to soften for about 20 to 30 minutes. Softening in the microwave can be tricky and could result in undesirable outcomes for your cream cheese.
Preheat your oven to 350 degrees.
Combine the softened cream cheese along with 1/3 cup fat-free sour cream, 2 large eggs, 1 tsp vanilla extract and 1/4 cup Domino Light (or 1/2 cup Splenda granular) in a mixing bowl. Beat with an electric mixer until smooth, approximately 2 or 3 minutes on medium.
Spray an 8" x 8" glass baking dish with olive oil. Scrape the cheesecake mixture into the baking dish, and bake in the preheated oven for 25 minutes. Turn off the oven, and leave the cheesecake in the oven for an additional 25 minutes.
Remove from oven, chill and serve with light whipped topping or fat free whipped cream. If desired, you can substitute fat-free cream cheese for one of the three packages without significantly affecting the cheesecake's taste. You won't miss the crust on this cheesecake, or the sugar and extra fat that's missing.
