As an Examiner reader, you may or may not know that I have a rather large following on Pinterest. Not only do I spend a considerable amount of time seeking out the best of the best (and testing recipes that, when successful, I pin to my Tried and True board). My boyfriend is the main benefactor of my work (the man loves to eat, and I love to offer him healthier options) but it recently occurred to me that I should share with all of you as well! While I love my Tried and True board, I do acknowledge that the way Pinterest is used is mostly as a repost forum, and most people do not consider the caption with the pinned photo to be from the pinner, but from the original source- be that 5 or 500 posts ago. That being said, I'd love to start a list on here where I post my favorite recipes from Pinterest, especially the ones I have tried and have gotten the thumbs up in my house! Finally, I'd like to post some "Challenge Recipes", ones that look delicious and the recipe looks sound but I haven't had a chance to make. I challenge you, the reader, to try these and let me know- be my recipe tester!
So, without much ado, the first issue of Weekly Pinterest Round Up.
Raw Vegan Alfredo Sauce with Zucchini Noodles
Raw eating is so healing! This was such a quick meal, and super tasty. Use the nutritional yeast and miso (you can buy nutritional yeast or "nooch" in the bulk bin at any Whole Foods or health food store). This is so fast-- peel zucchini, put the rest in a blender.
Mashed Cauliflower with Roasted Garlic & Chives
Vegangela does it again- this is a super fast recipe as well. In truth, I always keep a bulb or two of roasted garlic on hand, so that was already available to me. But that's easy enough- cut off the top, remove papery outside, drizzle with olive oil, wrap in tin foil, and cook at 400F for an hour. Done. Also, if you don't have an immersion blender, you can pulse this in a blender or a food processor instead of mashing with a potato masher.
Vegan Mac and Cheese
Chocolate-Covered Katie, I love you. I really do. You have provided me with some seriously crowd-pleasing desserts in your day. But now, this, and I don't know if I can't think about you the same way. You're beyond a dessert queen now Katie. You've entered the world of comfort foods. And you've done it well.

Oatmeal Cream Sandwich Bars
I haven't tried these yet- I'm trying to stay away from sugar. I've been sick for a week and I don't need to feed any infection going on!
