Fat Tuesday. Every year it is the same for the singles, and couples without children. It becomes a day for partying, bead throwing, and vibrant costumes with masks. For those with children, however, it becomes just another day that goes without celebrating.
This year, that can change. For those who can't go out to party (or would rather just stay at home), here is a delightful recipe for Gumbo. For those allergic to shellfish, feel free to eliminate the shrimp. The recipe is still just as good. This is a gluten free recipe. For the best taste, use organic ingredients. - 8 oz shredded chicken
- 4 cups chicken broth
- 1/4 onion
- 1 can (15 oz) hot chili beans in sauce
- 4 links Sausage with cheese (sub turkey for pork for healthy alternative)
- 12 small leaves fresh Oregano
- 1/4 cup fresh chopped chives
- 1/2 cup fresh chopped carrots
- 1 clove garlic - diced
- 1 can (14.5 oz) diced tomatoes in sauce
- 2 tbsp lemon juice or 1 fresh squeezed baby lemon
- 1 cup long grain rice
- 3 tbsp Worcestershire
- 1/4 tsp cayenne
- 1 beef bouillon cube
- 2 tbsp sugar
- 1/4 tsp paprika
- dash of parsley
- 1/4 tsp cumin
- 1/4 tsp turmeric
- 1 tbsp lemon pepper
- sprig basil
- 5 tbsp butter
- 2 tbsp corn flour - tempered with 4 tbsp water
- 1 lb shrimp (optional)
- dash liquid smoke
- salt & pepper to taste

To start, add 4 cups of Chicken stock, a beef bouillon cube,the can of hot chili beans, rice, and tomatoes to a large pot with a lid. Turn on burner heat to high. Add in pre-cooked chicken, sausage, and shrimp. Dice onions, carrots, and garlic. Add to pot, and heat to boiling.
Fresh Spices are best
While waiting on the pot to boil, cut a sprig of fresh basil to top each bowl of gumbo. This will be used later. Add in the Worcestershire, fresh oregano, chopped chives, and fresh squeezed lemon.
Once the pot is boiling, reduce heat to medium and add in the following dried spices: cayenne, paprika, parsley, cumin, turmeric, and lemon pepper.In a small bowl, melt the butter, and then mix the sugar into the butter. Then, add both to the mixture and stir. Add a dash of liquid smoke.
Next, add the tempered flour to the mixture and stir. Allow the gumbo to boil covered for 25 minutes, stirring the mixture every 5 minutes. After 25 minutes are up, continue stirring, and allow the gumbo to continue to cook uncovered for an additional 10 minutes.

Gently ladle the soup into bowls. Careful now, it's hot! Top each bowl with a sprig of basil. Each pot serves around 8-10 people. You can serve it with your favorite bread. Enjoy your hard work.
