These pumpkin cake truffles are simple to make and assemble. Since your hands will get a little dirty when making this dessert, you may want to get the kids involved! They like playing with their food!
Pumpkin Cake Truffles
- 1 box of spice cake mix
- 1 can of pumpkin puree
Preheat oven to 350*.
Line a 9x13 baking dish with no-stick foil.
Mix ingredients together and bake in a 9x13 baking dish according to the box directions.
Allow baked cake to cool.
Top with icing. Click here for a cream cheese icing recipe.
With your hands, remove the iced cake into a large bowl.
Squish the iced cake together until a moist mixture is formed.
Wash your hands.
Line 2-3 cookie sheets with wax paper.
Roll mixture into 1 inch rounds.
Place them onto prepared pans, about 1 inch apart.
Again, wash your hands and then place cookie sheets into the refrigerator or freezer.
In a double broiler, melt white 1 bag of chocolate baking disks.
When chocolate is melted into a smooth mixture with no lumps, turn off the burner. Dip truffles into chocolate mixture one at a time to coat. Place each one back onto the cookie sheet it came from.
After you coat each truffle, place them back into the refrigerator to set.
Store in the refrigerator until ready to eat!
